Paleo Shrimp Scampi

This nutrition-packed recipe was shared by FOA Facebook follower Nicole Capp Holbrook, who writes: I made this yummy Paleo Shrimp Scampi with Florida Organic Aquaculture shrimp for dinner tonight and it was absolutely delicious!!

Instead of traditional scampi over spaghetti, Nicole's creative recipe replaces pasta with squash for a great boost of veggie nutrition with the beautiful colors and flavors of fall...


Here's the recipe:

1 spaghetti squash
1 pound of shrimp, peeled and deveined (Need help with this step? Check out our step-by-step instructions here: How to Clean & Prepare Fresh Shrimp)
olive oil
4 cloves of garlic, minced
salt and pepper
1/2 cup of chopped fresh parsley
zest of half a lemon
juice of 2 lemons
lemon slices, from half a lemon

Bake spaghetti squash in the oven for 40-60 minutes at 350 degrees, until the skin starts to change color and gets a little puffy. Slice in half (be careful it's hot!), scoop out the seeds and then use a fork to create the 'spaghetti'. Preheat a large skillet over medium-low heat and add olive oil. Next, add garlic and saute for a couple of minutes. Next, add the shrimp, salt, and pepper. Cook, stirring often, until the shrimp have just turned pink. Cooked shrimp will begin to form a "C" shape, but a closed "O" indicates they have been cooked for too long.

Remove shrimp from heat and add lemon juice, lemon zest, parsley and lemon slices and stir to combine everything. Serve over spaghetti squash and enjoy!
